- 1 large chicken breast
- 3/4 c chopped parsley
- 3/4 c chopped cilantro
- 2 1/2 tbsp mayo
- "squirt" of mustard
- 1/2 lemon
- kosher salt
- black pepper
- baguette
- Cook chicken breast in skillet on stove top seasoned with salt and pepper. Let cool. Chop into easy bite size pieces.
- Add chicken and the rest of the ingredients and stir well.3. Top slices of baguette. Serves 2.
I made this up based on left overs from the Fine Cooking Fresh mag's "Grilled Chicken with Fresh Herbs and Farfalle" recipe.
