lima bean, watercress and herb dip

This is a family favorite to have with celery or pita chips. It's very refreshing and does not fill you up between meals.

  • 1 c cottage cheese
  • 14 oz lima beans
  • 1 bunch scallions, chopped
  • 2 oz watercress, chopped
  • 1/4 c mayonnaise
  • 3 tablespoons chopped fresh mixed herbs
  • salt and pepper
  1. Blend everything together in a food processor or blender.
  2. Cover and chill for several hours before serving.
