dan's mexican lasagna
- 1 lb ground beef or turkey
- 1 red onion, chopped
- 1 c frozen corn
- 1 c salsa
- 14 oz beans (kidney or black), drained and rinsed
- 2 tsp cumin
- 2 tsp chili powder
- dash of paprika
- dash of cayenne pepper
- salt and pepper
- tortillas
- 1 c graded cheese of choice
- Saute onions until translucent.
- Brown meat and add to onions.
- Add beans, corn, salsa and spices.
- In a 9x9 casserole dish, add 1/2 the mixture.
- Layer with cheese, then tortilla. Repeat meat mixture, cheese, tortilla.
- Bake at 350 for 1 hour covered with aluminum foil.
- Remove foil, add more cheese, and bake another 5-10 minutes to brown cheese.
- Let sit for 5-10 minutes before serving.
