Ingredients:
- 1 tbslp olive oil
- 1/2 onion, chopped
- 3 small stalks celery, chopped
- 1 large carrot, chopped
- salt and pepper
- 1 tsp cumin
- 2 c vegetable broth
- 14 oz can "bean, lentil and barely soup"
- 1/2 c cooked quinoa
- 1 c water
- 12 oz frozen sweet potato cubes
Instructions:
- Make a mirepoix with the first 4 ingredients and add the salt, pepper and cumin.
- Add the broth, soup and quinoa. Cover and let cook on medium for about 10 minutes.
- Add water and sweet potato cubes and let cook another 10 minutes.
