NOTE: mixture will have to sit for 1 hour before you make the meal.
Ingredients for the falafel:
- 1 1/2 c dried chickpeas
- 1 onion, chopped
- 3 cloves garlic, chopped
- 1 c fresh parsley leaves
- 1 tsp baking powder
- 1 tsp ground cumin
- 3/4 tsp salt
- 1/2 tsp red pepper flakes
- 3 tbsp olive oil
Sandwich extras:
- 4 pita pockets, cut in half
- 4 lettuce leaves, torn
- 1 c cherry tomatoes, chopped
- 4 tbsp greek yogurt
- 8 tbsp mint, chopped
Falafel Instructions:
- Bring large pot of lightly salted water to boil. Add chickpeas and cook until slightly softened but still firm in the center, about 10 minutes. Drain the chickpeas and cool slightly.
- In a food processor, combine the chickpeas with onion, garlic, parsley and process until coarsely pureed. Transfer to a bowl and stir in baking powder, cumin, salt, and flakes. Chill mixture until cold, about 1 hour.
- With wet hands, shape 1/4 c portions of the chickpea mixture into patties. Pour about 1 tbsp oil into a large frying pan over medium-high heat. When oil is heated, place 3 or 4 patties at a time and cook, turning once, until browned on both sides, about 4-6 minutes total. Repeat to cook remaining falafel.
Serve with sandwich extras to let each person create their own.
